     Scalloped Chicken

Ingredients
1 whole chicken or 3 to 4 chicken breasts
1 loaf potato bread
1 medium sweet onion diced
1 cup chopped celery
2 tsp. sage
salt and pepper to taste
1 stick butter
 

Instructions
Cooking the chicken you have 2 choices. You can either boil the whole chicken or the chicken breasts,or you can roast the chicken.The choice is yours .If you have a really good whole chicken which will produce a good broth,then boil.Cook up the meat and after it cools,shred it into bite size pieces. Set aside. In a skillet,melt 1 stick butter,and add onion and celery.Saute for a few minutes,just so the veggies pick up the butter flavor. In a large bowl, tear up the bread.I do not dry it nor cut it into cubes.I am a tearer.Pour the veggies with butter over the bread.Add chicken,sage,and salt and pepper.This is where you add either canned broth,1 or 2 cans,or the broth if you boiled your chicken.It is very hard to say exactly how much broth you will need.You want it to be moist ,but not mushy.Pour into a well greased 9 by 13 pan or casserole dish. Bake at 350 degrees for 45 minutes to an hour.You may cover it with foil for the first 30 minutes,then remove foil so the top gets
brown and just a little bit crispy. If you have remaining broth,whip up a rich gravy to serve with dish.
Serving Suggestions
This is great all by itself as a main meal.Leftovers just get better and better.
