     White Bean and Hominy Chicken Chili

Ingredients
tablespoon extra-virgin olive oil
3 large garlic cloves, minced
1 (28 oz.) can fire-roasted diced tomatoes
1 (15.6 oz.) can Great Northern or navy beans, undrained
1 (15.5 oz.) can white or yellow hominy, drained and rinsed
1 (14 oz.) can lower-sodium chicken broth (You can use vegetable broth if you are doing meatless)
2 to 3 teaspoons chili powder
1 teaspoon ground cumin
½ teaspoon salt
 
¼ teaspoon freshly ground pepper
1 ½ cups chopped cooked chicken breast (If you are going meatless then leave chicken out and you can

Instructions
Heat the olive oil in a large pot over medium heat and swirl to lightly film the bottom of the pot. Add the garlic and cook for about 15 to 30 seconds or until the garlic just starts to smell great. At this point, stir in the rest of the ingredients except for the chicken and bring to a boil over medium,high heat. Lower the heat to medium,low or low and gently simmer, stirring every now and then, for about 15 minutes. Stir in the chicken and cook another 15 minutes or until the flavors have blended.
