     Sugar Cream Pie

1 (9 inch) pie shell, bake for about 5 minutes
1 c. sugar
1/8 t salt
1-1/2 c. half and half
5 T. cornstarch
1 t. vanilla
yellow food coloring (a drop or two for color) (optional)
6 T butter

Mix sugar, cornstarch, half and half, and salt in sauce pan. Cook to boiling point. Add vanilla, food coloring (if using), and the butter; return to heat. Cook, stirring constantly until thickened. If there are any lumps, put through a fine sieve. Pour the mixure into pie shell and sprinkle with nutmeg. Bake at 325 degrees for 35 to 45 mintues or until firm and lightly browned.
This is a very sweet dessert.
