     Aunt Dorothy's Beef Salami

Ingredients
5 lbs. lean Hamburger
2 1/2 tsp garlic salt
2 1/2 tsp mustard seeds
1 1/2 tsp onion salt
2 1/2 tsp coarse black pepper
5 heaping tsp. morton tender quick
1 1/2 tsp poultry seasoning
1 small hot pepper
 

Instructions
Mix well and cover tightly . Refrigerate 24 hours. Kneed down real well, add 1/4 cup water and mix together -Refrigerate again 24 hours. make into 5 rolls- wrap in foil and cook 170 degrees for 7-9 hours.
