Coat the bottom of a large pot with olive oil and add the vegetables and water. Bring to a boil over medium heat and add basil, thyme and salt to taste.
Simmer, covered, for 45 minutes. Remove lid. Simmer 15 minutes more.
In a large frying pan, briefly saute the chicken with a litle oil until done. Slice into 1-inch pieces and add to the vegetables.
