beat 4 egg whites at high speedwith an electric mixer until foamy. Add remaining 1/4 C sugar, 1 Tbsp at a time, beating until stiff peaks form and all sugar dissolves (2 to 4 min.) Spread meringue over ramekins on baking sheet. Bake at 325 for 15 to 20 min. or until meringue is golden. Let cool on wire rack 30 min.
