     Mexican Spoon Bread

Ingredients
1 cup yellow cornmeal
1 Tablespoon sugar
1/2 teaspoon baking soda
3/4 cup milk
1/3 cup oil
2 eggs, beaten
1 (15 ounce) can cream - style corn
1 (4 ounce) can diced green chilies
1 (8 ounce) package shredded cheddar cheese, divided
 

Instructions
Preheat oven to 350 degrees. In mixing bowl, mix cornmeal, sugar, 1 teaspoon salt and baking soda. Stir in milk and oil and mix well. Add eggs and corn and stir. Spoon half batter into sprayed 9 x 13 inch baking pan. Sprinkle half of green chilies and half cheese over batter. Repeat layers, ending with cheese. Bake uncovered for 35 to 40 minutes or until light brown. Serve from pan.
