     Mint Cashew Aioli

Servings   1 cup

Ingredients
1 cup cashews
1 tablespoon lemon juice
teaspoon salt
teaspoon agave or honey
1 teaspoon lemon zest
5 cloves garlic
cup water
⅓ cup tightly packed mint
 

Instructions
Place all ingredients except mint in high power blender until creamy. Add the mint to the blender and pulse in so to leave the mint visible in the aioli.
Great dip without mint also
