     wjjjww zucchini corn fritters

Ingredients
2 eggs, beaten
1/2 cup milk
1 T evoo
1 cups flour
1 tablespoon baking powder
2T coconut sugar
1/2 teaspoon salt
fresh ground pepper
2 cups grated zucchini
 
1 1/2 cups frozen corn
1 cup shredded cheddar cheese optional
Instructions
whisk together eggs, milk, and butter. stir in flour, baking powder, sugar, salt and pepper. mix in zucchini, corn, and cheese.
drop by generous tablespoons into pan coated with olive oil at medium high heat.
remove to warm plate.
Serving Suggestions
serve with ranch dressing
