     Home-Made Potato Soup

Ingredients
6 potatoes peeled and quartered (med sized)
2 onions, chopped
1 carrot peeled and grated
1 stalk of celery sliced
4 chicken bouillon cubes
1 tablespoon parsley flakes
4 cups of water
1 1/2 teaspoon of salt/pepper
2 tablespoons butter
 
1 13oz can of evaporated milk
chopped chives

Instructions
Put all ingredients except for evaporated milk and chives into large boiler. Cook until potatoes are done. Mas potatoes with masher in the soup. Add evaporated milk. Let cook 10-15 minutes, slowly. Serve topped with chopped chives. Can grate cheese. This is our traditional Christmas Eve soup served with a tossed salad, but good anytime.
