Chicken Enchiladas

Ingredients
-
1 large onion
-
2 Tbsp butter
-
2 cups cooked chicken (I usually grill)
-
8 oz. cream cheese
-
salt & pepper
-
2/3 cup heavy cream
-
2 cups monterey jack cheese
-
soft white corn tortillas or flour tortillas

Additional ingredients to taste: jalapeno, green chiles, green salsa, black olives

Instructions
Saute onion in butter until brown. Add cooked chicken, cream cheese, salt & pepper to taste. Add any additional ingredients at this time.
Fill tortillas (if using soft corn tortillas heat in microwave first or cook in a little oil to soften) with 2-3 Tbsp of filling. Place in 9X13 pan, seam-side down.
Pour heavy cream over enchiladas and add monterey jack cheese. Bake uncovered for 20 minutes at 350...or until cheese melts.
For extra "umph," prior to filling, I spice my enchilada filling up with any of the following: jalapeno, green chiles, green salsa, black olives.
Serving Suggestions
Serve with salsa and sour cream.
