     Chicken Divan Casserole

Ingredients
2/3 c uncooked long grain rice
1/4 c butter
4 boneless skinless chicken breasts, cut into 1 inch pieces about 21/2 lbs.
1/2 c chopped onion
1/4 c all purpose flour
1 1/2 c chicken broth
1/2 c milk
2 Tbs dry sherry
1 c parmesan cheese
 
1 14oz pkg frozen chopped broccoli, thawed and drained
2 c cubed French bread
2 Tbs melted butter

Instructions
Preheat oven 350. Spray 13x9 baking dish. Cook rice according to pkg direcins, and keep warm. In a large skillet, melt butter. add chicken and onion, and cook, stirring often, for 6 to 8 min. Add flour, and cook for 2 min., stirring constantly. Add chicken broth, milk, an sherry, and cook for 4 to 5 min. or until thickened. Stir in cheese. Add broccoli and cooked rice, stirring gently to combine. Spoon mixture into prepared baking dish.
In a small bowl combine French bread an 2 Tbs meted butter, tossing gently to coat. Sprinkle evenly over casserole. Bake for 25 to 30 mins or until hot and bubbly.
Dish can be frozen. To serve casserole from freezer, remove, unwrap, and place in baking dish; let stand at room temperature for 30 mins before baking as directed above.
