     Perfect Corn Bread

1 cup sifted flour
1/4 cup sugar
4 tsp. baking powder
3/4 tsp. salt
1 cup cornmeal (yellow or white)
2 eggs
1 cup milk (evaporated milk is okay)
1/4 cup vegetable oil

Preheat oven to 425 degrees.
In a medium bowl, sift flour with sugar, baking powder and salt; stir in cornmeal
Add eggs, milk and shortening. Beat with a wooden spoon until smooth
Pour into greased 9x9x2 pan. Bake 25 minutes, or until bread is slightly golden on top and a toothpick inserted into the center comes out clean
