     Pasta Verde

Ingredients
2 tbsp dijon
2 tbsp white wine vinegar
1/4 cup and 2 tbsp olive oil
1 pound pasta
1 onion, sliced
2 small zucchini, sliced
8 oz snap peas
3 oz spinach
1 bunch o scallions, sliced
 
1/4 cup fresh basil

Instructions
Whisk together mustard, vinegar. Slowly add oil. Cook pasta. Heat 2 tbsp oil in pan cook onion, add zucchini, cook through. Add peas and spinach. Remove from heat and aadd scallions and basil. Add to pasta and pour vinaigrette over, toss.
