     Roasted Eggplant Dip

Ingredients
1 eggplant
8 oz sour cream
Juice of 1 lemon
Salt
Pepper
 

Instructions
Slice eggplant, boil, turning every 5 minutes. Skin should blacken. Remove from oven and allow to cool. Peel off blackened skin. Blend until smooth, stir in sour cream, and lemon juice. Season with salt and pepper.
