     Apple Butternut Squash Soup

Ingredients
1 tbsp butter
1 onion, diced
1 butternut squash, peeled, seeded, and chopped
4 golden apples, peeled, cored, diced
2 tsp salt
1 1/2 tsp cumin
1/2 tsp coriander
1/2 tsp ginger
1/4 tsp cayenne
 
1/4 tsp pepper
2 cups chicken stock

Instructions
Melt butter in pot, add onion until soft. Then add squash, cook for 10 minutes. Add apples, cumin, salt, coriander, ginger, cayenne, pepper, stock, and 2 1/2 cups of water. Bring to a boil. Reduce heat and simmer for 30 minutes. Purée in blender, and reheat.
