     Fresh Apple Cake

Ingredients
2-1/4 cups sifted flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. Allspice
2 cups sugar
1 cup oil
2 large eggs
1 tsp. vanilla extract
 
2 cups grated apples*

Instructions
Sift together flour, salt, baking soda, cinnamon and allspice. In a large bowl, beat together sugar and oil and set aside. In a small bowl, beat together eggs and vanilla extract.
Add egg mixture to sugar mixture and blend well. Add apples and nuts; blend.
Gradually add sifted dry ingredients and beat well. Pour into tube pan (a bundt pan would probably work, too) and bake. Cool 45 minutes before turning cake out of pan.
Serving Suggestions
*I use Delicious Apples. It takes the better part of 3 large ones for 2 cups grated. You can ice with cream cheese icing if you like.
