     Angel Food Cake

1-1/2 cups egg whites
1 cup cake four
1-1/2 cups plus 2 Tbsp. sugar - divided
1-1/2 tsp. cream of tartar
1-1/2 tsp. vanilla extract
1/4 tsp. salt

Place egg whites in a large mixing bowl and let stand at room temperature for 30 minutes. Sift cake flour and 3/4 cup sugar plus 2 Tbsp. together twice; set aside.
Beat egg whites with cream of tartar, vanilla and salt on medium speed until soft peaks form. Gradually add remining sugar, 2 Tbsp. at a time beating on high until stiff peaks form and sugar is dissolved. Gradually fold in flour mixture, a fourth at a time.
Gently spoon into an ungreased 10-inch tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest rack at 375 degrees for 30 - 35 minutes or until top springs back when lighly touched and cracks feel dry.
Immediately invert baking pan; cool competely. Run a knife around sides and center tube of pan. Invert cake onto a serving plate.
