     Jambalaya

Ingredients
1 cup water
10 3/4 oz can chicken broth
2 tbl hot chili powder
1/4 tsp salt
1 tsp paprika
1/2 tsp pepper
2 tbl veg. oil
1 tsp minced garlic
1 cup uncooked long grain rice
 
10 oz shrimp
1/2 lb frozen fish fillets thawed
can chopped tomatoes
10 oz. frozen peas thawed
1 cup diced onions

Instructions
In sauce pot, stir together water, chicken broth, chili powder, salt, paprika, pepper, oil and garlic. Bring to a boil, add rice. Cover, cook low heat 15 minutes. Stir in remaining ingred. except onions, peas and shrimp. Continue cooking uncovered until liquid is absorbed and rice is tender. 10 - 15 minutes. Stir in remaining ingredients, continue cooking until heated through 4 - 5 minutes.
