4 cups shredded, skinless meat from 1 rotisserie chicken
1/4 cup scallions, white and light green parts, thinly sliced
Instructions
1. Whisk together lemon juice, vinegar, garlic, salt and olive oil. In a large bowl, combine
beans, corn and tomatoes; toss with 2 Tbsp. of vinaigrette.
2. Divide greens among 4 plates. Top with chicken, bean mixture and scallions. Drizzle with
remaining vinaigrette.
