     Sage Chicken with Roasted Onions

Ingredients
1 (3 1/2) pound whole chicken
Salt and Freshly Ground Black Pepper
12 Large Fresh Sage Leaves
2 tablespoons extra virgin olive oil
2 Medium yellow onions, cut into wedges
 

Instructions
Preheat the oven to 400 degrees F. Season chicken inside and outside, with salt and pepper. Slide your fingers between the skin and meat to loosen. Slip the sage leaves under the skin.
Place chicken in baking pan, then rub 1 tablespoon of the oil. Arrange onions around the chickin in the pan. Drizzle remaining oil. Bake until browned and chicken has reached an internal temp of 160 degrees F. Should take about one (1) hour. Remove chicken from the oven and let sit for 15 minutes then carve.
