     Creamy chicken & Kumara Curry

Ingredients
1 x Tbsp Oil
500gr chicken thighs cut into large chunks
1 x onion sliced
1/2 cup red curry paste
400g red kumara peeled and diced
400g tin coconut cream or milk
3/4 cup water
1 x Tbpn fish sauce
2 x Tbpn chopped basil leaves
 

Instructions
Heat oil in a frying pan. Add the chicken and cook it over a high heat until golden brown. Reduce the heat to medium, add the onion to the pan and cook it for a further 3 - 4 mins. Add the curry paste and cook for another minute.
Add the kumara, coconut cream or milk, water and fish sauce. Simmer for 20 mins or until the kumara is soft. Stir in the basil
Serving Suggestions
Serve with rice
