     Mexican 8 Layer Dip

Ingredients
1 x can refried beans - mashed
200gr x sour cream
1/2 x pkt taco seasong mix
2 x mashed avocados
1 x jar salsa
1 x cup grated tasty cheese
Chives or spring onions
1/2 x c chopped black olives
1 x green capsicum chopped
 
3 x large diced tomatoes
Small handful fresh coriander
3-4 drops Tobasco sauce
Squeeze of lemon juice

Instructions
Spread on the bottom layer of a large flat dish the refried beans. Make the guacamole with the avocado, coriander, 1 x chopped tomato, 3 drops tobasco sauce and a squeeze of lemon juice. Spread this mix over the refried beans.
Layer salsa on top. Combine sour cream and the taco seasoning mix until well blended. Spread evenly over the top of the avocados.
Combine chives/ spring onions, cheese, capsicum, olives and 2 x chopped tomatoes. Sprinkle on top of all the layers. Then more coriander if desired.
Refrigerate and serve chilled with tortilla or corn chips.

This is a lovely nibble to have with a few drinkies
