Mix green pepper and pimiento.
Add mustard, salt, pepper, eggs, mayo and white wine. Mix well.
Gently fold in scallops.
Spoon into individual oven proof dishes.
Top with paprika & grated parmesan cheese.
Bake on 350 for about 15 minutes.
Can be simmered on 200 for up to 1 hour.
Serve with garlic mashed potatoes or grits.
