1 med. green pepper, finely diced
3.5 oz. pimiento, diced
3/4 tbs. prepared mustard
14 tbs. hot mustard
1/4 cup white wine
2 eggs
1 c. mayo
2 lbs. scallops (and/or shrimp, crabmeat)
grated parmesan cheese

Mix green pepper and pimiento. Add mustard, salt, pepper, eggs, mayo and white wine. Mix well. Gently fold in scallops. Spoon into individual oven proof dishes. Top with paprika & grated parmesan cheese.
Bake on 350 for about 15 minutes. Can be simmered on 200 for up to 1 hour.
Serving Suggestions
Serve with garlic mashed potatoes or grits.
