Line a baking sheet with wax or parchment paper.
Place 12 cookies face up on the baking sheet.
Taking one cookie at a time, scoop 1 scoop of ice
cream onto each cookie. Immediately spread with a
liberal dollop of natural peanut butter and top
with second cookie, pressing down slightly. Place
in the freezer for 30 minutes to 1 hour.
