     Tiropites (Just for Sara)

Ingredients
1 Lb. Filo (Greek pastry leaves found in freezer section by pie crusts)
1/2 Lb. Feta
1 carton (8 oz.) Cottage cheese large curd
1 carton (8 oz.) grated Romano cheese
1/2 C grated cheese (parmesan or mozzarella for milder flavor)
1 Lb. fresh, cleaned spinach leaves
1 tsp. ground black peppers
2 Eggs
6 fresh green onions (optional)
 
1 Lb. melted butter

Instructions
Crumble feta in small pieces and add cottage cheese and grated cheese. Add eggs and finely chopped green onions (if using onions). Add spinach leaves small bunches at a time until all are mixed in. Add pepper, mix well.
Layer Filo into 10 sheet stacks, and cut into 4-inch wide strips and brush each strip with melted butter. Place one tsp. of cheese mixture at the bottom of the strip and fold the corner up to form a triangle. Continue folding in a triangle shape until the entire strip is folded. Brush both sides slightly with butter and place on cookie sheet. Bake in a preheated oven at 350 for approximately 15 to 20 minutes - or until golden brown.
Serve immediately. Makes approximately 40-50 triangles.
These tiropites may be prepared in advance. Bake for approximately 12 minutes. After cooling, package them properly and freeze. When ready to use, bake in preheated oven at 350 for approximately 12 minutes, or until golden brown.
