Clean, trim broccoli. Set aside.
Cut remaining stems into 1/2 inch slices.
Melt butter in saucepan, medium heat.
Stir in broccoli stems and mirepoix.
Cover, cook 10mins.
Add stock and thyme and cook to boiling.
Whisk together flour and water until smooth.
Stir into soup.
Return to boiling.
Cook 1 minute.
Remove from heat.
