     Roast Loin of Pork

Ingredients
1 - 41/2 - 5 lb. boneless pork loin roast
salt and pepper
1 -10 oz jar apricot preserves
1/4 cup bourbon or orange juice
3 T soy sauce
4 garlic cloves, peeled and minced
 

Instructions
Heat oven 325F, Place pork in a roasting pan and rub with salt and pepper. In small bowl combine the preserves with bourbon(juice), soy sauce and garlic pour over meat. Cover and roast 30 min. Uncover and baste with sauce, cover and cont. to cook, basting every 20 min for 1 hour longer. Remove from oven, let rest.
Instead of roasting in an oven the pork can be placed in a crock pot on low all day with marinade over the pork. When done let rest 10 minutes. Carve and serve with pan drippings. Good with garlicky mashed potatoes. Leftover port is good for pulled pork fajitas.
