     RAISIN EASTER PIE

1 C. CRISCO
1 C. SUGAR
4 EGGS
1 t. BAKING POWDER
1 PINCH SALT
1 t. VANILLA
FLOUR
2 POUNDS RICOTTA CHEESE
1 & 1/2 POUNDS FRESH BASKET CHEESE
 
12 EGGS
1 C. SUGAR
2 T. SUGAR
1/2 BOX RAISINS SOAK OVERNIGHT AND DRAINED

Instructions
SOAK RAISINS OVERNIGHT IN WATER AND DRAIN.
CREAM CRISCO AND SUGAR ADD 4 EGGS ONE AT TIME MISING WELL. MIX BAKING POWDER AND SALT ADD TO CREAMED MIXTURE ADD VANILLA. MIX IN ENOUGH FLOUR TO MAKE STIFF DOUGH.ROLL OUT AND FIT INTO 3-5 PIE PANS DEPENDING ON SIZE. FILL AND PUT ON LATTICE TOP. BAKE 350 TILL LIGHTLY BROWNED.
FILLING...........BEAT RICOTTA AND FRESH CHEESE ADD 1 C. PLUS 2 T. SUGAR BEAT WELL. ADD RAISINS.
COOL ON RACK 20 MIN. REMOVE FROM PAN AND COOL COMPLETELY ON CLOTH. WRAP IN FOIL AND PUT IN PLASTIC BAG. STORE IN FRIDGE OR FREEZE.
