Prep
Preheat oven to 350. Cut bell peppers in half vertically. Clean out
seeds. Place in a greased baking pan with a small amount of water
at the bottom of the pan.
Stuffing
1. Sautee onion, seranos, tomatoes, and garlic until soft.
2. Add black beans, water, quinoa and any other veggie you want in
your stuffing.
3. Bring to a boil. Lower heat and simmer covered for 20 minutes.
Baking
1. Stuff pepper halves with your filling. Sprinkle shredded cheese on
top.
2. Cover with aluminum foil and bake for 30 minutes.
3. Add avocado to the top after peppers are baked.
