     Chocolate Kisses

Ingredients
1½ c hazelnuts
1c - 2 tbsp sugar
3 tbsp cocoa powder
¼ tsp cinnamon
3 egg whites, room temp.
pinch salt
 

Instructions
Preheat oven to 350°. Spread nuts on baking sheet and toast 10-15 min. Allow to cool. Reduce oven to 300°. Rub nuts with a towel to remove skins. Coarsely chop nuts.
Butter and flour 3 baking sheets. Mix sugar, cocoa powder, and cinnamon. Beat egg whites and salt until stiff but not dry peaks form. In three additions sprinkle sugar mixture over egg whites and fold in gently. Sprinkle with hazelnuts and gently fold in. Drop by level tbsp 2'' apart onto sheets.
Bake until dry to the touch but still soft, 14-15 min. Cool on rack.
