     Carrot Cake

Ingredients
3 c. flour
1 3/4 c. sugar
1 c. coconut
2 1/2 tsp baking soda
2 1/2 tsp cinnamon
1 tsp salt
2 c. shredded carrots
1 1/3 c. salad oil
2 tsp vanilla
 
1 tsp grated orange rind
11 oz can undrained mandarin oranges
3 eggs

Instructions
Mix everything together in a large bowl.
Beat 2 min at high speed.
Pour into greased and floured 9x13 pan.
Bake at 350 for 45-55 min or til pick is clean. Cool before frosting! (see Cream Cheese Frosting recipe)
