If you're in a sassy mood, add or substitute with-
Shitake or portobello mushrooms
Parsnips, rutabaga or beets
Brussel sprouts, celery
Radishes, diced ginger
Anything else you think might work. You'll find
out soon enough!
Cut larger veggies into 1 inch pieces, of
approximately the same size. Garlic can remain
whole cloves or be chopped. In a roasting pan,
toss vegetables with oil and herbs. Roast 1 hour
until tender, slightly browned and naturally
sweet, stirring occasionally.
