2 lb. red potatoes, quartered
|

1/4 cup melted butter (2 tbs)
|
|
2 tsp. minced garlic (2 to 3 cloves)
|
|
1 tsp. salt
|
|
1 lemon, juiced
|
|
1 tbs. grated parmesan cheese
|
|
|
|
|
|
|

Instructions |
|
|
-Preheat 350 degrees, put potatoes in glass dish
|
|
|
-In small bowl, combine butter, garlic, salt and
lemon juice. Pour over potatoes and stir to coat
|
|
|
-Sprinkle parmesan cheese over potatoes
|
|
|
-Bake, covered for 30 minutes. Uncover and bake 10
more minutes.
-May need to bake longer to get potatoes desired
softness
