|
-In medium saucepan melt 2 tbs. butter over high
heat
-Whisk flour and cook over medium heat, whisking occasionally, about 2 minutes
-Whisk in milk, bring to simmer and cook until
thickened, about 5 minutes. Put in salt and pepper

|
-Place rack in upper 1/3 of oven and preheat broiler
-Put half the bread slices on baking sheet and top
with ham and sliced cheese
-Spread milk sauce over each sandwich and top with
remaining bread

|
-Carefully spread outside of sandwiches with
remaining 2 tbs. butter
-Broil turning once until browned, about 3 minutes
per side

|
-Remove from oven, sprinkle shredded cheese on top
-Broil again until cheese is melted and lightly
browned, about 3-4 minutes
-Meanwhile drizzle sliced tomatoes with sherry
vinegar and EVOO, season with salt and serve
