     Chicken Salad Sandwiches w/ Walnut-Dill Pesto

Ingredients
1 small red onion, halved and thinly sliced
Finely grated zest and juice of 1 lemon
1 tsp. sugar
Kosher salt and pepper
1 cup dill bunch
1/4 cup walnuts
1 clove garlic
1/3 cup EVOO and more for drizzling
2 1/2 lb. rotisserie chicken skin removed, shredded OR cook chicken
 
2 tomatoes, sliced
Romaine lettuce
Thick slices country white bread, lightly toasted

Instructions
-Combine onion, lemon juice, sugar, 1/4 cup H2O, 1/2 tsp. salt and 1/4 tsp. pepper in medium bowl, set aside
-Pulse dill, walnuts and garlic until coarsely chopped -With motor running, slowly add EVOO
-Transfer dill pesto to large bowl and stir in lemon zest, salt and pepper -Add chicken and toss to coat
-Drain onion and squeeze dry -Drizzle tomatoes with EVOO and salt and pepper -Put lettuce, tomato on bread, then top with chicken salad and onion and serve.
