     Yellow Squash Casserole

Ingredients
2 pds yellow squash, diced
1 med onion, chopped
1/2 cup milk
2 tbsp cornstarch
2 tbsp butter, melted
2 eggs, slightly beaten
1/2 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
 
8 oz shredded cheddar cheese

Instructions
Oven 350 Put squash and onion in large pot covered with water. Simmer until soft, about 15-20 minutes. Drain well, returnt to pot and mash with potato masher.
Combine milk and cornstarch. Stir in squash. Add remaining ingredients and stir. Transfer to casserole dish, greased. Bake 1 hour or until lightly browned and center is set.
