Arrange 1 thinly sliced gala and 1 thinly sliced granny smith apples in overlapping rows on a parchment paper-lined baking sheet. Pinch blue cheese into small pieces, arrange on apples. Bake at 425 degrees for 2-3 minuites or just until cheese is melted. Sprinkle with chopped toasted pecans, salt and pepper to taste.
