     Pinto Bean Soup

Ingredients
2 (1 pound) package dry pinto beans
1 smoked ham hock or 2 cups chopped ham
 

Instructions
Wash beans, cover with cold water and soak overnight. Drain, cover beans with water and bring to a boil. Add ham, reduce heat and simmer slowly 3 to 4 hours. (you may need to add more water). When beans are tender, remove 2 to 3 cups beans and smash with potato masher. Return to pot and season with a little salt and pepper.
