     Garlic and parmesean mashed potatoes

Ingredients
2 lbs baking potatoes peeled and quartered
3 medium garlic cloves
2 tablespoons olive oil
1/3 cup grated parmesean cheese
1/4 cup kalamento olives, pitted and chopped
1/2 tsp. each of salt and pepper
Garnish- drizzle of olive oil and chopped parsley
 

Instructions
Cook potatoes and garlic in water to cover over medium heat 20 to 25 minutes until tender. Ladle off and reserve 2/3 cup cooking water. Drain potatoes and return to pot.
Mash hot potatoes with potato masher or beat with hand-held mixer on medium high speed, adding olive oil and reserve cooking water. Stir I cheese,olives, salt and pepper.
Spoon into serving bowl. Drizzle with a little olive oil and sprinkle with parsley.
