Combine the soy milk, tofu, vanilla, and maple syrup in a blender and process until smooth. Pour the mixture into a large, shallow bowl and dip in the bread. Soak the slices for 2 minutes, turning them once to coat both sides.
Lightly oil a medium skillet and place on medium-high heat. Add the bread and cook for 4 to 5 minutes, or until lighlty browned on both sides.
Serve hot, topped with apple sauce and chopped nuts.
