     Chive - Potato Souffle

Ingredients
3 eggs, separated
2 cups hot prepared instant mashed potatoes
1/2 cup sour cream
2 heaping Tablespoons chopped chives
 

Instructions
Preheat oven to 350 degrees. Beat egg whites until stiff and set aside. Beat yolks until smooth and add to potatoes. Fold beaten egg whites, sour cream, chives and 1 teaspoon salt into potato - egg mixture. Pour into sprayed 2 quart baking dish. bake for 45 minutes.
