     Stuffed Tomatoes

Ingredients
4 Small - 2 or 3 Medium Tomatoes
1 Garlic Clove
1 c. Bread Crumbs
1/4 c. Parsley
Olive Oil
Fresh Herbs like thyme, oregano and basil - or dried Italian Seasoning
Parmesan Cheese
 

Instructions
In a food processor, combine garlic, parsley, herbs, bread crumbs and parmesan. Pulse to combine and then drizzle in olive oil. It needs to be the texture of a crumble. Add the juice from the tomatoes if too thick. Cut the tomatoes in half and lay crumble mixture on top of the tomatoes. Sprinkle lightly with olive oil and salt. Bake about 35 minutes or until tomatoes are very soft and crumble is golden brown.
You can also add your own ingredients to the crumble mixture to make this as a main dish. I've added zucchini and sausage before. Take off the top of the tomato, hollow out the inside and stuff it with the crumble mixture. This is a great recipe to play with and make it your own.
