     Spicy Noodle Salad

Ingredients
3 Tbl. creamy peanut butter
Finely grated zest and juice of 2 large limes
1 Tbl. sesame oil
2 Tbl. agave nectar
1/2 c. low-sodium soy sauce
1/4 c. balsamic vinegar
1 1/2 tsp. hot sauce

1 lb. linguini pasta
 
1 Tbl. high-heat oil
1 red bell pepper, julienned
1 yellow bell peppered, julienned
1 orange bell pepper, julienned
3 c. mung bean or regular bean sprouts
3/4 c. roasted salted peanuts or cashews
1 bunch scallions, green parts only, cut on a bias

Instructions
Whisk together all the ingredients for the dressing in a medium bowl and refrigerate. Cook the pasta until al dente, drain and rinse with cold water. Transfer to a large bowl. Heat a large saute pan over high heat and add the oil, and wait until it begins to shimmer. Add the bell peppers and saute until soft and slightly browned. Add the cooked bell peppers, bean sprouts, nuts and sliced scallions to the pasta. Combine the pasta salad with the dressing and toss thoroughly. Serve immediately or refrigerate for the next day.
