Preheat oven to 350 degrees. Rinse chicken inside and out with cool water and dry with paper towels. Place peeled onion inside chicken cavity and brush butter over chicken. Tie legs together and place in foil - lined broiler pan. Roast chicken for 20 pounds per pound. Baste often with additional butter. Chicken is done with juices run clear.
Tip- Other good foods to put in the cavity include, lemon, lime, orange and apple.
