     Grilled Eggplant roulades/w/goat cheese

Ingredients
Eggplant sliced long 1/4 inch thick
Goat cheese 8 oz
2 T heavy cream
1/4 c Dried cherries
White balsamic vinegar
Olive oil 3 T
Sea salt
Fresh ground pepper
2 T fesh flat leaf parsley
 

Instructions
Season slices w/s&p and olive oil- let marinate- have grill surface @425-450- grill on each side
Mix cheese-cherries-parsleyuntil soft & workable
Pour mixture on slices-roll-secure w/a toothpick- grill rolls a few minutes longer or bake in oven 3-4 mintutes
Drizzle balsamic vinegar, olive oil, & s&p over & serve!
