     Minestrone Soup

Ingredients
2 Tbsp olive oil
1/2 cup minced white onions
1/2 c. thinly sliced carrots
2 ribs of celery minced
1/4 c. french cut green beans
4 cups vegetable broth
1 (15 oz) can light red kidney beans
1 (16 oz) can tomato juice
1/2 tsp dried oregano
 
1/4 tsp black pepper
1/2 tsp dried basil
1/2 tsp minced garlic
1 bay leaf
1/4 tsp salt
2 Tbsp parsley
3 cups hot water
1 cup small shell pasta ( cooked)
1 lb. country style sausage (browned)

Instructions
Heat olive oil over med. heat in a large soup pot. Saute onion, garlic, celery, green beans, and carrots in oil for 5 mins.
Add vegetable broth, tomato juice, kidney beans, hot water and spices to pot. Bring soup to a boil, then reduce heat and allow to simmer for 20 mins.
Add pasta and sausage and cook for an additional 20 mins or until desired consistency. Remove bay leaf before serving.
Serving Suggestions
You can add a sprinkle of parmesan cheese to each soup bowl as it is served.
