     Chicken Parmignana

Ingredients
4 chicken breasts, thawed and pounded flat
1 jar tomato sauce
spaghetti
italian bread crumbs
1-2 eggs, beaten
EVOO
mushrooms
1 can Hunt's basil and oregano diced tomatoes
shredded motzarella
 
shredded parmesan

Instructions
Boil pasta & warm tomato sauce in sauce pot. Pre heat oven to 350 degrees. Sautee mushrooms in EVOO. Heat 1/4 in deep of EVOO in skillet to Med-hi. Meanwhile, coat chicken breasts in egg and then cover in bread crumbs. Pan fry both sides of chicken till breading is browned...chicken will be undercooked. Place chicken on cookie sheet and cover in tomatoes, sauteed mushrooms, then cheeses. Heat in oven 15 minutes til chicken is fully cooked. Serve with a side of the pasta covered in sauce.
