     Giant Peanut Butter Cup Cookies

Ingredients
1/2 cup butter or margarine, softened
3/4 cup sugar
1/3 cup creamy or crunchy peanut butter
16 mini-peanut butter cup cut into quarters
1/2 tsp. vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 egg
 

Instructions
Heat oven to 350 F. In a small mixer bowl, beat butter, suagr, and peanut butter until creamy. Add egg and vanilla; beat well. Stir together flour, baking soda and salt. Add to butter mixture; blend well. Drop dough by level 1/4 cup measurements onto ungreased cookie sheets, thee cookies per sheet. Cookies will spread while baking. Press about 7 pieces of peanut butter cups into each cookie, flattening cookie slightly. Bake 15 to 17 minutes or until light golden brown around edges. Centers will by pale and slightly soft. Cool for 1 minute on cookie sheet. Remove to wire rack, cool completely.
