     Fruit Bars

Ingredients
1 cup dried, pitted fruit
1/3 cup sugar
1/2 cup water
1 lemon
1 cup flour
1 cup brown sugar
1/2 tsp. salt
8 Tbsp. butter
1 1/2 cups quick-cooking oatmeal
 
3 Tbsp. milk
shortening or cooking spray

Instructions
Preheat oven to 350 degrees. Cut the dried fruit into small cubes. Put the diced fruit into the saucepan. Add the sugar and water to the saucepan. Cook the fruit mixture over medium heat until it is thick, about 5 to 10 minutes, stirring often. Then turn down the heat low. Grate the rind of the lemon, measure 1 Tbsp. of lemon rind and stir it into the fruit mixture. Cut the lemon in half, squeeze one half of the lemon over a Tbsp. until it is filled. Then stir the lemon juice into the fruit mixture. Turn the heat off and set the mixture aside. Measure the flour, brown sugar, and salt into the mixing bowl. Use the fork or pastry cutter to mix in the butter until the mixture is crumbly. Add the oatmeal and stir in the milk. Mix well. Spray the baking pan. Pour half of the oatmeal mixture into the bottom of the pan. Pack the mixture into the pan. Spread fruit mixture on top, then oatmeal. Bake for 40 minutes.
